Traditional Chicken Clear Soup


Ingredients;

  • 1 kg chicken,cut into 16 pieces
  • 2 ltr water
  • 4 lemon leaves, tear off
  • 3 salam leaves
  • 1 lemongrass
  • 3 cm galangal, punched
  • 3 cm ginger, punched
  • 3 tbsp vegetable oil
  • 2 tbsp soy sauce
  • 2 bars onion spring, minced
  • 1 bar celery, minced
  • 3 tbsp fried shallots
  • 2 tbsp fried garlic
  • 1 tomato
  • Salt


Blended herbs;

  • 8 shallots
  • 5 cloves garlics
  • 3 cm ginger
  • 1/2 tsp pepper
  • 1/4 tsp nutmeg


Cooking Methods;

  • Boil chicken with 2 ltr water with lemongrass, salam leaves,ginger and lemon leaves till tender, set aside.
  • Heat vegetable oil, saute blended herbs till fragrance, pour chicken broth, soy sauceand salt till boiling
  • Add chicken, onion spring, celery,fried shallot and garlic, tomato, cook till well done
  • Ready to be served with steamed rice
